Broiled Portabella Mushrooms

Instead of a steak, try this recipe on the grill.

Ingredients:

Yields: 4 Servings

4 Portabella Mushrooms
2 Cups Roasted red peppers in oil
4 Tbsp. Balsamic vinegar
1 medium onion
2 Cloves garlic minced
Italian Seasoning
Basil
Oregano
Extra Virgin Olive Oil

Directions:

1. Cover pan with extra virgin olive oil.

2. Place cleaned mushrooms in pan.

3. Cut up onions, peppers, and place on top of mushrooms

4. Top with Italian seasoning, basil, oregano, garlic, and balsamic vinaigrette to taste.

5. Marinate for 2 hours covered in refrigerator. Take out and broil for 2 minutes. Top with cheese and broil until cheese is melted. Enjoy!
